Ingredients
- Small sardines in olive oil with Espelette paprika
- Tomato
- Aioli - mango or other flavor
- To make the cookie
- White bread crumb - 50 g
- Wheat flour - 5 g
- Egg whites - 60 g
- Curry
- Salt
- Pepper
- For make the onion confit
- White onion - 30 g
- Olive oil - 30 g
- Vinegar - 10 g
- Cream - 25 g
- Salt
- Pepper
Instructions
- To make the cookies, put the bread, flour, curry, salt and pepper in a glass suitable for a blender.
- Blend and slowly add the egg whites, until you get a homogeneous paste.
- Spread the paste on a silicone plate giving it shape using a spatula.
- Bake for 10 minutes at 130ºC.
- To make the onion confit, place a frying pan on the heat with a drizzle of oil.
- While it heats up, peel and cut the onions into brunoise.
- Fry in the pan, and when they start to brown, pour in the vinegar for a few minutes.
- Add the cream, salt and pepper and reduce until the onion takes on texture.
- It only remains to assemble it with our main ingredient, small sardines in olive oil with Espelette paprika, and add the finely chopped tomato together with a few points of caramelized onion and others of mango aioli.
