Stuffed Egg with loins and tuna belly and anchovies
Stuffed Egg Fan Club? Here we are! Stuffed Egg are a classic that we have all enjoyed at some point. A classic that has evolved over the years and admits all kinds of preparations and presentations. In any case, they always succeed, especially if they contain canned fish. In addition, Fernandi’s recipe calls for not one, but three canned fish.

Ingredients
- White tuna belly - two cans
- White tuna loins - one can
- Fried tomato - a small brik
- Garlic - one clove
- Fresh parsley - a little
- Salt
- Water
- Chicken eggs - 12
- To make the garlic mayonnaise:
- Eggs - 2
- Lemon - 1/2
- Garlic - two cloves
- Fresh parsley - a little
- Salt
- Sunflower seed oil
- To decorate:
- Piquillo peppers - 3 cut into strips
- Cantabrian anchovies - 3 cans
Instructions
- Cook the eggs in water for about 12 minutes. Let them cool and peel them.
- Cut them in half and remove the yolks.
- In a bowl, crush part of the yolks with a fork and the rest, to decorate. Add the loins and the tuna belly with its oil, the finely chopped garlic, a little parsley cut very small (it gives it a very good flavor), and the tomato. Mix everything very well.
- Fill the eggs with the mixture.
- Make the mayonnaise: chop the two garlic cloves together with the parsley, add the juice of half a lemon and the salt; Grind and add the oil little by little until it sets.
- With a spoon, put a little mayonnaise on top of the stuffed eggs.
- Garnish with anchovy fillets and peppers in thin strips.
- With clean hands, crumble the rest of the yolks to decorate and spread them over the eggs.
