Have you started to go through your new year’s resolutions? Not yet? One of the most common is to eat healthier or lighter foods, so we’re convinced that this recipe by Iratxe will be perfect for many of you. That’s today’s dinner sorted!

Ingredients

  • Chicory leaves
  • White Tuna
  • Red pepper – for roasting
  • Green olives
  • Salt
  • Extra virgin olive oil
  • Vinegar

Preparation

  1. Roast the pepper in the oven.
  2. Meanwhile, clean the chicory leaves. Rinse well.
  3. Let the pepper cool down a bit.
  4. Chop the warm pepper into pieces and put them on the chicory leaves.
  5. Add the tin of White Tuna.
  6. Add a few olives.
  7. Dress to taste.
