Pink tomato salad with anchovies

The pink tomato is a very special variety: it is large, very fleshy and with a thin skin; it barely has seeds, it is sweet and has very little acidity. Delicious! Moreover, combined with our Cantabrian anchovies... The enjoyment is huge!
In addition, this salad also has avocado and feta cheese, which combine great and help complete the whole. In short, a quick and delicious salad.
- Wash and cut the pink tomato and place it on the plate.
- Cut the avocado and put it in small pieces on top of the tomato; add a little salt.
- Top with a few cubes of feta cheese and fillets of Cantabrian anchovies to taste.
- Dress with extra virgin olive oil and sprinkle a little oregano on top.
