Liquid salad with potato foam and white anchovies in vinaigrette
Just as the children have returned to school, we return to our traditional recipe contest. In addition, we do it in style, with a spectacular blended salad, with potato foam and anchovies.

Ingredients
- To make the potato foam
- Potato - one large
- 50 ml milk cream and 2 egg whites - 2
- To make the liquid salad
- Lettuce - very green leaves
- Romesco sauce - one teaspoon
- Salt - a pinch
- Vinegar
- Extra virgin olive oil
- To decorate it:
- Anchovies in vinaigrette
- Red pepper
- Balsamic cream of Modena vinegar
Instructions
Liquid salad:
- Put all the ingredients in the blender jar.
- Blend until you get a rather liquid cream.
- Put it in the fridge.
Potato foam:
- Cook the potato with its skin.
- Once cooked and warm, add the milk cream and a pinch of salt and beat with the rod whisk to obtain a fine puree.
- Mount the two egg whites until stiff.
- Introduce the mashed potatoes into a bowl with the egg whites and mix, wrapping so that it does not lose air.
Placing it on the plate:
- In a soup plate, put a thin layer of blended salad.
- Put the anchovies in a circle on the salad layer.
- Place the potato foam in the center of each circle of anchovies.
- Put another well-rolled anchovy on the foam.
- Finally, add red pepper, to taste, cut into very small dice and add a touch of balsamic vinegar cream around the edge of the plate.
- Serve it very cold.
