Barley salad with Cantabrian anchovies
Have you ever eaten barley in salad? If you have never tried it, we propose the original salad of MCarmen that combines this healthy cereal with our Cantabrian anchovies, lettuce, tomato, pomegranate ... and a special touch.
Although barley is generally linked to the production of beverages such as beer or whiskey, the truth is that it can also be a very interesting food. So if you are bored with rice pasta salads, or just want to try something new, don’t miss Carmen’s recipe.
- Barley grains - one cup
- Pomegranate - 1
- Tomato - 1
- Cantabrian anchovies
- Orange jelly
- Extra Virgin Olive Oil
- Let the barley grains soak for twelve hours.
- Cook the barley grains in boiling water for 40-50 minutes. Drain and let cool.
- Place the cooked grains in a bowl; add salt and extra virgin olive oil, pomegranate grains, lettuce, sliced tomato, and finally the anchovies.
- Drizzle again with extra virgin olive oil and a few drops of orange jelly.
