Christmas canapés: tuna, anchovy and mussel sushi selection

If you’ve been put in charge of the Christmas canapés for this year’s family meals, you’re in the right place, because there’s no shortage of ideas here. For example, this sushi selection proposed by Juana (La cocina de Juani).  Surprise your family with this Cantabrian-Japanese fusion cuisine!

Preparation

  1. Clean the rice and boil it with the chili pepper and the salt, covered with a lid, for around 20 minutes.
  2. Set aside and leave to cool.
  3. Prepare the ingredients.
  4. On the Makisu mat place the seaweed with the shiny part facing outwards.
  5. Extend the rice with wet hands, covering two thirds of the seaweed.
  6. Place the ingredients of each type of sushi:
    • White Tuna sushi: Spread the olive pâté; add two rows of gherkins; in the centre of the two rows of gherkins put the White Tuna.
    • Cantabrian Anchovy sushi: Place one row of mini cucumbers, another with the peeled carrot cut lengthwise, and between the two, place the anchovy fillets, also lengthwise.
    • Mussel sushi.Place a row of chopped avocado, another row with the beetroot, also chopped, and between the two, a row of mussels.
  7. Roll the seaweed with the help of the mat and wet the end of the seaweed with some water so that it sticks.
  8. Cut slices of the desired size with a sharp knife.
  9. Place on a tray and accompany with soya sauce or wasabi.
