“Cantabrese” salad

Do you like the Caprese salad? Well, Iratxe proposes her own free version of this Italian classic with tomato, mozzarella and… Cantabrian anchovies!

Ingredients

  • 1 salad tomato
  • Mozzarella cheese
  • Anchovies from the Bay of Biscay
  • Olives – (optional)
  • Extra virgin olive oil
  • Vinegar

Preparation

  1. Slice the tomato and place it on a plate.
  2. Cut the cheese and add it to the plate.
  3. Add some Cantabrian anchovies.
  4. Add some olives (optional).
  5. Dress to taste
